Selbstgemachte Nudeln sind einfach ein Gedicht. Wie ihr sie füllen könnt, was ihr bei der Füllung beachten solltet und welche unterschiedlichen aber einfachen Ravioliformen es eigentlich gibt, erfahrt ihr in diesem Blogpost.
Nachdem ich euch hier vor kurzem schon die sechs Tipps für den perfekten Nudelteig verraten habe, möchte ich euch natürlich nicht die passenden Rezepte dazu vorenthalten. Selbstgemachte Nudeln lassen sich ganz grob in zwei Sorten gliedern: Nudeln als Beilage oder gefüllte Pasta, die meistens ein eigenes Gericht darstellt. Genau um diese zweite Sorte soll es heute gehen. Denn ich bin sicher, dass euch zahlreiche Soßen zu selbstgemachten Fussili, Tagliatelle oder Spaghetti einfallen. Doch wie sieht es mit Tortellini oder Ravioli aus? Auf was muss ich achten und welche unterschiedlichen Füllungen gibt es?
Die Füllung macht’s
Ganz klar: Füllen könnt ihr eure selbstgemachte Pasta mit allem auf was ihr Lust habt. Als Rezeptidee habe ich euch eine Büffelmozzarella-, eine Chili-Ziegenkäse- sowie eine Ricotta-Thymian-Füllung mitgebracht. Käse ist oftmals Grundlage für die Füllung, aber selbstverständlich könnt ihr auch Pilze (Steinpilze eignen sich hervorragend), Fleisch oder ein ganzes Eigelb als Füllung nutzen. Wichtig ist, dass eure Füllung nicht zu feucht ist, damit eure gefüllten Nudeln nicht auseinander brechen.
Ravioliformen: Wer die Wahl hat, hat die Qual
Wenn ihr den Teig hergestellt habt, die ausführlichen Schritte finden sich bei den im Beitrag folgenden Rezepten, stellt ihr euch sicherlich die Frage: Welche Form soll mein selbstgemache Pasta haben? Es gibt ganz unterschiedliche Formen und ich stelle euch hier noch die einfachsten vor. Am unkompliziertesten ist es, wenn ihr euch einen Ravioli-Ausstecher besorgt. Diese gibt es in eckig oder in rund.
Damit könnt ihr direkt eure Ravioli ausstechen und habt dann jeweils die Wahl, etwas Füllung auf das Raviolo zu geben und es zusammen zu klappen. Alternativ könnt ihr auch einfach ein zweites Raviolo ausstechen und dieses auf das erste geben. Dabei bekommt ihr etwas mehr Füllung unter. Achtet darauf, dass ihr die Luft vorsichtig aus dem Raviolo drückt und im Wasser keine Luftblase in euren Ravioli entsteht. Die Nudelteig haftet am besten, wenn ihr den Teig vorsichtig mit den Fingern mit Wasser befeuchtet.
Alternativ zu den Ausstechern könnt ihr auch mit einem Ravioli-Rad arbeiten und euch eigene Formen und Größen zurecht schneiden.
3 Rezeptideen für selbstgemachte Nudeln
Nach der Handwerkskunst geht es jetzt aber zum kulinarischen Teil. Im folgenden Stelle ich euch drei leckere Rezepte für selbstgemachte Nudeln vor: neben der unterschiedlichen Füllung sind alle drei Pastateige unterschiedlich zubereitet, wie ihr unschwer an der unterschiedlichen Farbe erkennen könnt. Als „Färbemittel“ habe ich Spinat und Rote Beete Saft benutzt.
Ravioli gefüllt mit Büffelmozzarella
Grüne Ravioli treffen auf weichen Büffelmozzarella. Schneidet man die gekochten Ravioli auf, fließt flüssiger Mozzarella aus der Pasta. Diese Ravioli sind das beste Beweisstück, dass man zur frischen Pasta kaum etwas dazu benötigt. Geschmolzene Butter, ein paar Salbeiblätter, geröstete Pinienkerne und frisch geriebener Parmesan. Fertig ist das Nudel-Gedicht.
Chili-Ziegenkäse-Ravioli in Zitronenbutter
Wer auf der Suche nach einem ausgefallenen Rezept ist, wird bei den Chili-Ziegenkäse-Ravioli fündig. Zitrone, Ziegenkäse und Chili harmonieren einfach spitzenmäßig miteinander, sodass die Ravioli gut und gerne die Vorspeise eines ausgefallenen Menus bilden können. Ich habe sie bereits mehrmals hergestellt und jedes Mal haben alle Bekochten schüchtern gefragt, ob es denn noch etwas geben würde. Sie würden gerne noch einmal genau den gleichen Teller bekommen. Gut, dass ich jedes Mal noch Ravioli übrig hatte.
Rote Beete Ravioli gefüllt mit Ricotta und Thymian
Diese Ravioli sind nicht nur optisch der Oberknaller, sie schmecken auch noch so. Die lila-pinke Farbe bekommen diese Ravioli durch den Rote-Beete-Saft, der in den Teig eingearbeitet wird. Er dient dabei ausschließlich als Farbgebung. Die Ravioli schmecken keinesfalls nach Rote Beete. Die Füllung aus Ricotta und Thymian lässt stark die Erinnerung an laue Abende in der Toskana aufkommen. Auch hier benötigt ihr nur etwas geschmolzene Butter und frischen Parmesan und schon ist das Ravioli-Gericht fertig.
