Ich bin auf der Suche nach dem Frühling und habe ihn zumindestens kulinarisch mit dem Italian Wrap mit scharfer Salami und gerösteten Pinienkernen schon gefunden. Manchmal linzt der Frühling schon am Winter vorbei und versucht sich breit zu machen. Die ersten Krokusse sprießen bereits und vergangene Woche wurden in München die 15° Grad geknackt. Leider kehrte drei Tage später der Schnee wieder zurück.
Mir egal! Lasst uns doch einfach den Frühling auf unseren Teller holen. Ein leichte Mittelmeerprise und die wärmende Sonne im Rücken – dafür steht der Italian Wrap mit scharfer Salami und gerösteten Pinienkernen. In der italienischen Version des mexikanischen Exportschlagers Wraps und Tacos treffen zudem knackige Tomaten, auf frischen Babyspinat, gehobelten Parmesan und leicht geschmolzenen Mozzarella. Ich muss gestehen, nur beim Beschreiben des Komponenten läuft mir bereits wieder das Wasser im Mund zusammen – aber wie gut, dass noch zwei Wraps übrig geblieben sind, die im Kühlschrank darauf warten, von mir verzehrt zu werden.
Zutatenliste
ergibt vier Wraps
- Große Wraps
- 10 Cocktailtomaten (je saftiger, umso besser)
- 50g scharfe italienische Salami
- zwei Hände junger Babyspinat
- 100g gehobelter Parmesan
- 100g Mozzarella
- 20g geröstete Pinienkerne
- eine Hand voll frische Basilikumblätter
Los geht’s
Den Babyspinat waschen und in kochendem Wasser eine Minute blanchieren. Spinat abgießen, kalt abschrecken und gut ausdrücken, damit er so wenig Wasser wie möglich enthält. Parallel in einer beschichteten Pfanne die Pinienkerne bei mittlerer Hitze anrösten.
Die Tomaten waschen und vierteln, den Mozzarella in kleine Stücke schneiden, Basilikum waschen, trocken schütteln und grob hacken.
In einer weiteren beschichteten Pfanne die Wraps einzeln erwärmen. Sobald die eine Seite warm ist, den Wrap umdrehen und die Mozzarellastückchen auf den Wrap geben. Nach ein bis zwei Minuten fängt der Mozzarella an zu schmelzen, dann den Wrap aus der Pfanne holen. Wichtig ist, dass der Wrap noch weich ist und nicht durch zu große Hitze hart und brüchig wird.
Nun die Salami auf den Wrap verteilen, Spinat, Tomatenstücke, Parmesan, Pinienkerne und Basilikum darauf geben. Den gefüllten Wrap vorsichtig rollen, sodass der Inhalt nicht hinaus fällt. Am besten den Wrap in der Mitte durch schneiden, da er so einfacher zu essen ist. Sollte der Wrap nicht halten, könnt ihr einfach einen Zahnstocher hineinstecken.
