Es gibt Kombinationen, die gehören für mich intuitiv zusammen. Dazu gehören Pommes und Mayo, Pasta und Parmesan, Semmel und Butter und eben auch Spinat und Spiegelei. Koche ich mit Spinat, habe ich das tiefe Bedürfnis dazu ein Spiegelei zu essen. So dachten auch die Italiener und haben die Spinat-Spiegelei-Pizza erfunden. Eine kleine Hürde stellt bei diesem Rezept nur das Spiegelei dar, aber dazu später mehr.
Beginnen wir aber erst einmal mit dem Teig.
Der Pizzateig
Zutatenliste
ergibt 4-6 Pizzen, je nachdem wie groß sie ausgerollt werden
- 150g Weizenmehl
- 150g Dinkelmehl
- einen halben Würfel Hefe
- 5 EL Olivenöl
- 200g frischer Spinat
- 1 Knoblauchzehe
- 8 EL Sahne
- 50g frisch geriebener Parmesan
- 4 Eier (pro Pizza ein Ei)
- Salz und Pfeffer
Los geht’s
Für den Teig Mehl mit einer Prise Salz vermischen. Die Hefe mit 1/8l lauwarmen Wasser verrühren. Alles zusammengeben und zu einem Teig verkneten. Den Teig mit einem Küchenhandtuch zugedeckt eine Stunde an einem warmen Platz gehen lassen.
Den Spinat waschen, die Stiele entfernen und kurz blanchieren. Den Spinat abgießen und gut abtropfen lassen bzw. ausdrücken, damit er so wenig Feuchtigkeit wie möglich enthält. Die Knoblauchzehe schälen und kleinhacken. Die Sahne und 2/3 des Parmesans mit dem Knoblauch vermischen und salzen und peffern. Die Sahnemischung mit dem Spinat verrühren.
Den Teig noch einmal durchkneten und kleine Kugeln formen – je nach Größe eurer Pizzen. Auf einer bemehlten Arbeitsfläche die Teigkugeln ausrollen und den Rand etwas nach oben drücken, damit später die Maße nicht auslaufen kann.
Die Pizzen auf ein Backblech legen (keinen Backrost benutzen, sonst tropft eventuell Belag oder auch Ei hinunter und ihr dürft euren Backofen putzen) und die Spinatmischung auf die Pizzen verteilen. Die Pizzen in den bei 220° Umluft vorgeheizten Ofen geben und ca. 15 Minuten backen.
Mini-Spinatpizza mit Spiegelei aus der Pfanne
Dann könnt ihr euch entscheiden, ob ihr das Spiegelei direkt auf die Pizza gebt oder das Spiegelei klassisch in der Pfanne bratet und es kurz vor dem Servieren auf die Pizza gebt. Die erste Version ist die klassisch italienische, allerdings birgt sie ein gewisses Risikopotential, da die Gefahr besteht, dass das Ei von der Pizza herunterrutscht und euer Spiegelei am Ende neben der Pizza liegt (wahlweise auch auf dem Backofenboden). Die zweite Version gelingt mit großer Sicherheit ohne bemerkenswerte Zwischenfälle.
Solltet ihr das Spiegelei direkt auf der Pizza braten wollen, empfehle ich, kleine Eier zu nehmen und nicht das ganze Eiweiß auf die Pizza zu geben, da dieses sich sonst verselbständigt und das Eigelb hinterher zieht (bei großen Pizzen ist dies natürlich kein Problem). Dann noch einmal 5 Minuten backen, den restlichen Parmesan auf die Pizzen geben und mit Pfeffer würzen.
Solltet ihr Teigkugeln übrig haben, könnt ihr diese problemlos einfrieren – sehr praktisch für eine blitzschnelle Spinat-Spiegelei-Pizza.
